The oval leaves of this Amaranth are purple-red and green. The leaves are tender and delicious, and the Red Beauty variety delivers a high yield even in warmer weather. Also called Chinese Spinach or yin choi. Edible Amaranth is used in Chinese stir-fry. In Asia and Africa it is added to soups, steamed, or cooked and then served as a salad. In the West, it is prepared and served like spinach. Sow seeds in late spring after last frost to early summer.
