The fruit of this Japanese eggplant is a shiny, bright, spring-green all the way up its 12” length. The calyx is also the same uniform color. The Choryoku is a vigorous and prolific producer of these large, very sweet and tasty eggplants. Enjoy the firm fruits broiled or grilled, or cook them as you would any other eggplant.
