These kabochas, or small-sized Japanese pumpkins, weigh about 2 pounds and are harvested when they are only about 5” in diameter — just right for a single serving. The skin ripens to a deep pine green with lighter green stripes, and the yellow-orange flesh has a nutty, sweet flavor. The short vines of the Baby Delica make it popular with commercial and small-scale growers alike, as each plant produces more fruit per square foot or per acre than other types of squash. The fruit stores very well. Enjoy these Baby Delicas stuffed and baked, or even as part of a salad, after you slice and boil them.
