The April Cross is the giant white radish hybrid best known for its extra-slow bolting habit and reliable crop. Its pure white flesh, including the neck, makes it strikingly handsome, as well. The root of this daikon is approximately 16” in length and 2½” inches in diameter. Like other radishes, the versatile April Cross is excellent raw, cooked or preserved. Peel and slice as chips or julienne style for a pretty addition to a relish tray, grate it as a condiment, or grill it with other vegetables to add variety to a summer barbeque. Don’t toss the leaves too quickly, as they are rich in vitamin C, beta carotene, calcium and iron.
