This popular green pak choi or shanghai pak choi hybrid has striking dark green leaves and light green petioles that are short and tender. It is an early maturing variety with uniform plant growth and has excellent tolerance to heat. The San Fan is early bolting and adapts well to most areas provided temperatures stay in the range from 50°F-90°F. This vegetable is widely used because its refined flavor and texture complements many dishes.
