Thai Pea eggplants are tiny round green eggplants that grow in clusters similar to cherry tomato clusters. The Thai Pea eggplants are harvested when the eggplants have a light green color and have a slight bitter taste and crisp texture. They become very bitter and tough when they are over ripe. These eggplants are best when they are harvested and used that day. The eggplants are used whole in stir-fry and most delicious seasoned with curries and spices used in Thai cooking. They are also pickled and used in soups. The plant is vigorous and grows tall. Bulk seed and seed packet purchasing will be available in DECEMBER 2006.
