This specialty pak choi variety is smaller than “Baby Bok Choy.” It is also known as baby nai yu bok, nai bai cai and nai bai cai. It is similar to our Chinese Pak Choi and Dwarf Pak Choi varieties except very small and compact. This Asian green has curled, glossy, dark green leaves with short white petioles. It grows very fast and best if harvested around 2” tall. It can be grown year-round in sub-tropical areas. Stir-fry, boil and add to soup. One popular preparation method is to boil the small pak choi whole and dress it with a cooked sauce consisting of sesame oil, fresh garlic and ginger, soy sauce and oyster sauce.
