Yard long beans are called Asparagus beans or Chinese Long beans. The variety name, Mosaic, describes the purple, red and green colors of the pod that create a pattern. They are most common in southern China and are highly prized because of their crisp, sweet, tender pods and generous yields.

Cultivation: Prepare fertile, well-drained soil. Sow seeds in spring/summer after last frost in a warm, sunny location. Keep soil moist. Fertilize as needed. Train to climb a vertical support. Harvest when pods are smooth, tender and 16-20" long.

Culinary tips: Used most notably in the popular Szechwan dish ‘Dryfried Beans’, these may be used to replace string beans in any dish. Can be deep-fried, stir-fried, steamed or used in soups. Prepare beans by cutting into 2" sections.
