This popular Chinese specialty is a vigorous perennial that resembles a Western chive. This particular leek is grown for its young flower buds, long stems and slender, dark green leaves that grow up to 14" long—all of which are edible. Chinese leeks are used frequently in Chinese and Japanese soups, stir-fries and salads. They also are a perfect addition to an omelet or scrambled eggs.
