Its sweet flavor and dry texture make this "ebisu" type hybrid very popular in the Tokyo region. One of the best tasting kabochas, Hokkori squash are globe shaped with deep-yellow flesh protected by dark green skin. Each plant yields 3-4 very uniform fruits. In Japan it is often cut into bite-sized pieces and simmered, with or without skin. This variety stores particularly well and will keep for months as long as it is kept dry and puncture free. You can also cube the flesh and store it frozen.
