This popular traditional Japanese green has deep green leaves and a mild flavor, somewhere between that of a spinach and an Asian mustard. It is an all-season variety. Its tender leaves and mild flavor make it best for salad or stir-fries. Can be eaten at any stage; the flower shoots are sweet and juicy. Komatsuna is especially rich in calcium.
